What happens if the herd fills before my payment clears?
We operate on a strict, first-come, first-served ledger. Because demand for our premium, local beef is exceptionally high, an allocation is officially secured only the moment your initial payment clears.
If your payment arrives after the current 16-share herd has already reached capacity, your spot will be transferred to the very next herd in line, or you can request an immediate 100% full refund of your core deposit.
How much meat do I actually get in one single share?
It is important to note that one single share (1/16th of the animal) yields approximately 30 to 40 pounds of packaged, take-home beef.
This weight includes your complete allocation of bone-in cuts, pure primals, and traditional offal. This amount is specifically designed to fit easily into a standard kitchen refrigerator/freezer combination without requiring you to purchase a dedicated chest freezer.
How is the beef harvested and portioned?
We employ traditional, ancestral butchery methods designed to maximize freshness, minimize waste, and give you ultimate culinary control. We intentionally avoid standard industrial retail trimming:
Bone-In Cuts: Portioned into manageable 3"x3" blocks. This sizing fits perfectly into home cookware while fully preserving the rich bone marrow for deeply nutritious, slow-cooked broths.
Pure Beef Primals: To protect the integrity and moisture of the meat, pure beef muscles are left intact in substantial, half-gallon-sized portions. This deliberate, premium processing choice allows you to effortlessly custom-cut your own steaks or roasts to your exact preferred thickness. With zero bone or cartilage in these sections, a standard kitchen knife glides through the pure muscle in a single, effortless sweep.
Every individual share is securely packed into two distinct bags that you must claim at pickup:
- Bag 1: Your primary beef allocation (the 3"x3" bone-in cuts and large primal beef portions).
- Bag 2: Your allocated portion of nutrient-dense offal (including liver, spleen, and traditional organ meats), separated for your convenience.
